Anne of Green Gables, lots (and lots) of yellow and some great muffins!!


Thursday!

A great workout on Wednesday evening... 60 minutes of pool running. 10 minute warm up, 4x10 minute intervals and 10 minute cool down. I ate a small amount 3 hours before the workout and a nice dinner afterwards. I felt great and no problems with being sick to my stomach during the workout - yay!!

Yellow.

I have really been into yellow these last few days.
SBG and I had a great time at Whole Foods this week! From yellow cauliflower and mango to beautiful yellow daffodils, we were all things yellow.
Yellow makes me HAPPY. :)

Some candy for my friend for Sunday's marathon...
I ate Swedish Fish as part of my carbo loading the week of the last marathon I ran! YUM!!




Today I made the most delicious Carrot Apple Muffins! They were super easy, healthy and so tasty! I am excited to share with you! Are you ready to eat?
Let's get started!
First I gathered all of my ingredients...





Then I mixed melted butter and brown sugar...



Next I added vanilla extract and 2 eggs...






Then, I pureed one organic Fuji apple and two organic carrots...




I added the puree (the color is so pretty!) to the egg/sugar/butter mixture...




Then I added whole wheat flour and salt...




The last step before mixing everything together is adding baking soda to a 1/4 cup of hot water...




Mix all the ingredients together just until blended. Then place 1-1 1/2 tablespoons of the mixture into muffin cups. Cook for 18-20 minutes in a 325 degree oven. 




Fantastico! :) Perfect for breakfast or a snack (pre or post workout!). I always, always need healthy snacks for the kiddos' after school snack or to put in their lunch. Also, I am so HUNGRY after a workout, so this is perfect!



Carrot and Apple Muffins

Author: Natrunsfar (adapted from Allrecipes.com)
Serves: 12 oversized muffins

Prep time:15 minutes
Cook time: 18-20 minutes
Total time: 35-40 minutes

Ingredients:

1/3 cup unsalted butter (melted). Note: I always use butter instead of canola or vegetable oil.
1/2 cup brown sugar (you can also use honey! I was out of honey, but I think it would taste equally as wonderful).
1 teaspoon vanilla extract
2 eggs
1 medium sized apple and 2 carrots pureed in a food processor
1 3/4 cups whole wheat flour
1/4 teaspoon salt
1 teaspoon baking soda
1/4 cup hot water


Directions:


Preheat oven to 325 degrees F (165 degrees C).
Separately melt the butter.
Also, puree the apple and carrots in the food processor.

In a large bowl whisk brown sugar and melted butter.
Add eggs and vanilla and stir well.
Next, add the apple/carrot puree and lightly stir.
Stir in flour and salt.
Add baking soda to hot water. Stir to mix and then add to batter.
Using a muffin pan, add 1 -1/2 tablespoons of the mixture to each muffin cup.
Bake for 18-20 minutes.
Cool for 10 minutes then serve
